If you didn't already know this, then this will be a shocker.
If you've hooked up your iDevice to your Gmail via Mail.app then you've unlocked an unknown (sort of) feature of the Notes.app. Your Notes are automatically backed up into the "Notes" folder in your Gmail as emails. They are already marked as "unread" so this may be the reason you did not notice when they were placed there.
If any emails are placed in that folder via Gmail, they will not sync back into your iDevice. (Thank goodness your wife didn't see that message you saved from your girlfriend when she looked in the notes on your iDevice.)
